Assuming your busiest seasons are spring (planting) and fall (harvesting) task humans to gather wild plants in summer and to do things like repairs and building in winter. If your workload is too high turn off a few repairs (just remember to turn them back on later), and make sure people aren't going too far to accomplish tasks like hunting and fishing. Set wool outfits to unlimited so you have excess for trading, and linen outfits to 125% (so if you get an influx of villagers you have enough for everyone). Make sure you have enough, and as good as possible, sickles. Also make sure you have enough mortars and hearths. You want to crank those up to be one per human.
